Check flow from water pump first to eliminate that.. Radiator has to be clean and not restricted.. No stat should be a better option with a high pressure cap.. Hoses and clamps need to be in good shape as well as water pump impeller, Head gaskets, Other water gaskets, and radiator needs to handle the pressure.. With good air flow, correct time,And fuel adjustments... I always run electric fans with built in shrouds with zero issues.. Check all that stuff first and dial it in..

No reason to run a stat.. Im not a mopar kind of guy.. But an engine is an engine.. My small, small block chevy is no stat, electric water pump, good tune, good time, electric fan (just one medium sized), and decent hoses and hardware.. I have no issue running 20 min at 180-210 with minimal loss from overflow.. People laugh but i run about 1/3 cup cottonseed oil or equivalent as a wetter... If I didnt notice a difference I wouldnt bother.. You shouldnt have a problem keeping most of your water if everything is working to capacity.. Is a rag or mouse nest hiding in a port or jacket?.. Ive seen some odd things happen..

you said you keep breaking ears off the block so I assume you are having the same cooling problem on multiple engines...?
