Imo depends on car. Mopars i used 1/4 on rockers to door and front clip to doors and 1/8 everywhere else. Full frame car where rockers dont help with strength 1/8 is plenty good as stated you want your plate to bend with sheetmetal

Depends on the car and class I'm running. Thicker if I'm running a stocker show if I'm not allow much cage so then it all helps hold frame especially the inner door kickers.

definitely weld the bottom of the door to the rockers, and the top door frame to the roof.
