What did the tread look like on the tire you put in. We do not cut the bead off.

Putting tire inside a tire is not the hard part. The hard part is getting the tire on the wheel without pinching the tube. You got it. We wrap our tubes with a couple loops of painters tape. Seems to help.

i never cut beads. use plenty of long pry bars, tons of baby powder and go two sizes smaller for the stuffer usually. i like the extra weight on the axles, better traction i think. never broken an axle yet.. like i said tons of baby powder for tubeing, and plenty of lube for tires. with putting pressure in right spots while beading, i can get a set of tires completely done in under 45 minutes. takes practice practice practice.

Going to start doubling tires so I have multiple 78-15. What would be a good tire to stuff with? I'm thinking a 215-70-15? Also have some 7-15s and some 6.50-15. What is some good tires to stuff with?

Alot of people are seriously overthinking this doubling thing. If you really want to know the "exact" size, measure the inside height of the stuffee and then locate a stuffer thats less than that. If its too big, like others have said, you will have a hump in it. If its a bit too small, it will look like your tire is low on air. We dont cut our beads off either.
