I vote Edelbrock 4bbl with a spreadbore-to-squarebore adapter. Pretty basic stuff to make it fit and the adapters are about $10-$20 depending on where you get it, they usually come with both gaskets. Edelbrock also sells a linkage adapter to make it easier to hook it up the the stock Chrysler cable & kickdown linkage.
I've been using these carbs on my 4bbl manifold equipped Mopar engines for years with great results. Just last weekend I ran this same setup on a 400 engine; used an Edelbrock Performer 600 CFM carb and I can't overstate how great it ran. Big fan.

Here is the question, I need to rejet my Holley 500! it curently has .073 to big for my stock 360. (my opinion) What would be a good jet size to put in it. I have one that I'm not sure of the jet size on but the motor screamed when I had it on there but I have it on a 400 now and its dialed in so I dont want to change it. Thanks in advance Ed

I'm not big on guessing jet sizes for a particular engine because there are too many variables... I would rather plop it on there and see what it does, then go from there. Jetting changes without a sniffer are based on the carb tuner's ability to read the signs. Spark plug color is a great indicator, throttle response, black smoke, stuff like that if you don't have a sniffer to really dial it in. If you just got to have it super crisp then book some dyno time and sharpen it up by reading the air/fuel data.
Generally I find that a Holley 4412 jetted to run well on one of my derby engines runs well enough on all of my derby engines because even though the displacement runs from 318 to 400, none of them are hopped up race engines with big cams and big flow that are demanding dramatically different fueling. I run the same Holley 4412 on my 2 bbl 360, 383, and 400 derby engines with no complaints, and one time in a last minute pinch I ran it on a 318 and it did fine. Ymmv.

I know that the holley 4412 is one of the ultimate derby/dirt track carbs. I love it. but I pretty much only know how to bolt em on and hook up linkages but that is pretty much where my knowledge ends. as far as what kind of magic happens on the inside... im lost.

Do they make an adapter from stock 318 intake to holley 4412? I have heard of one an ebay somewhere that is specifically for that swap, haven't seen it myself though. You can take a Mr Gasket #1937 adapter and machine it to fit.

Yeah, I do also. Can't seem to figure out why the idle and lowspeed circuits clog or won't unclog.

I've wasted countless hours trying to figure out why those things run perfect one day and completely suck the next, never to run right again no matter what you do to the insides. Boil, soak, lube, clean, pick, probe, new parts three times over but to no avail. Been through that at least 4 different times at first vowing to figure it out only to be defeated in the end by an unseen gremlin. I finally gave up on them entirely deciding that once they $#it the bed they never allow themselves to be resurrected. Some kind of self destruct button or something. The smaller Holley 318 carbs are a little better, but they suffer from flaky floats that love to stick open or closed at totally random times. I haven't given up on those yet but I do try to avoid them.

Great info here guys!! Getting ready to run my first mopar (79 doba)and I have been wondering what to do for a carb and intake. Looks like a 4412 will replace my carter!! Any of you have good luck with an air gap intake or should I save my $$$ an run the stock intake with an adaptor for the 4412??? Just bought an hei distributor to eliminate the smog crap as well. Any good info to help me there???

I would stick with the stock cast iron intake, losing the lean burn is a must... if you have a 4 barrel intake I'd think about running a 600-750 edelbrock performer carb. I absolutely love them for demo use. I used to think that the thermoquad was #1 but the float bowls are huge and love to flood out on even "soft" hits great for street use but absolute garbage in the demo pit. I run a 750 ed on all my big blocks and 600's on all my small blocks.
if you are running a big block.... you already have an "air gap" intake
